Celebrate with the Cervantes Family, 37 years of La Mariposa Mexican Restaurant serving Northern Colorado, and "The Grand Opening" of the New La Mariposa Mexican Restaurant location at; 2033 Ken Pratt Boulevard, Longmont, Colorado
It's finally "Grand Opening" day!

After weeks of launching our "Soft Opening" period, we are very excited to invite everyone to our "Grand Opening". Our wonderful staff has been working really hard, and training many hours. Now, they are ready! Expect their very best as they serve you, and your loved ones. It is because of each one of them, their hard work, and dedication that all of this is possible. We are very proud of our team, and cant wait to showcase their talents and great service.
This Tuesday, April 23rd, 2024 doors will open at 8 AM, with the unveiling of our "New Breakfast Menu". Breakfast will be available from Monday through Saturday, 8 AM to 2 PM. Frappés, Benedicts, Tres Leches Pancakes and so much more await our breakfast lovers!
Festivities will continue through out the day with our famous Taco Tuesday Specials. We will however, be closed from 2 - 4 PM in preparation for the official Ribbon Cutting ceremony which will conducted by The Longmont Chamber of Commerce at 4 PM. Following the official opening of the new La Mariposa Mexican Restaurant Longmont location, we will continue with a rendition "Las Mañanitas", ( Traditional Mexican birthday song. Performed by Mariachi Sol De Mi Tierra) kicking off our "37th Anniversary" celebration!
- A 37 year old dream...
La Mariposa brand, proudly represents a story of perseverance, hard work, family values and love. A story that began 44 years ago, when Mrs. Cervantes set out to sell burritos, in an effort to raise money for her one year old son's baptismal present, a pair of baby shoes. Her burritos would have such success that a few years later the family would venture into entrepreneurship, and open a tiny 20'x20' burrito shop at 1240 Ken Pratt Boulevard in the family's hometown Longmont, CO. That tiny shop, just like a butterfly, has flourished from its cocoon into a small chain of family owned restaurants, with locations in: Greeley, Lyons, Boulder, and Longmont called "La Mariposa Mexican Restaurant" which translates to "The Butterfly".
After thirty seven years of proudly serving the Northern Colorado community, we moved from our original location, to: 2033 Ken Pratt Boulevard, Longmont, Colorado. This will now be the new home of La Mariposa Mexican Restaurant, and as a thank you for all of your support these past 37 years... we want to celebrate this wonderful occasion with all of you.
Come FIESTA with us until 12 AM, as we unveil our new "Late Night Menu", which will be available daily from 9 PM until midnight! Enjoy new hours, new menus, and a new La Mariposa restaurant.
